What are some of your favorite recipes?
I just made pork carnitas! My recipe differs slightly but, it’s very easy to put together & it feeds a crowd! The shredded pork can also be frozen or made into empanadas or burritos! I make my marinade with cilantro, onion, garlic , jalapeño, oranges (with peels) and cumin. I whiz it in the blender except for oranges & marinade a pork butt/shoulder for at least a day. Pop in crockpot overnight. Reserve marinade & reduce shred pork & spread on cookie sheet drizzle on marinade and bake 400 till brown. Serve with a squirt of lime & fresh cilantro feeds 12+.. served with Spanish rice, refried beans, guacamole and flan !

One of my family favorites is my own Spicy Chicken & Rice
1 small rice
(brown, yellow or white)
2 cans
Rotel
½lb Velveeta Cheese
1-2 lbs
skinless Chicken breast
1 can Red
(kidney, pinto, etc.) or Black Beans
6 quart
pot/boiler
Yields:about 20~1 cup servings
Boil
chicken breast in enough water to cover the chicken until done; remove from
broth to cool.Add 1 tsp salt and the
bag of rice to the broth.Add 3 cups of
water to completely cook the rice. Add more water if necessary.Tear chicken into small pieces and add to
cooked rice. Cut Velveeta into small cubes. Add beans, Velveeta cheese, and
Rotel to rice.Stir well until cheese is
melted.
