Today’s meaty recipe comes from Melissa L of “The Kids are Grown, Now What?

Carne Asada is one of my favorite Mexican dishes. There is something about the crunchy charred exterior contrasting with the juicy burst of flavor you get when you bite into it. I am getting hungry just thinking about it! There were any number of great restaurants in Illinois where I could get my Carne Asada fix but that changed when I moved to South Dakota. I had to come up with my own recipe and I was surprised at how easy it is!

2 C Salsa (I used home made but store bought works fine too)

1 Skirt Steak

Marinate skirt steak in salsa for at least 4 hours. The longer you marinate the better the flavor. Remove meat from marinade and grill to desired level of doneness (I am a medium rare girl).

I prefer to grill over charcoal or gas. If you cannot grill then you definitely want to use your broiler to get that lovely charred crust.

Serve with rice and beans.

Now you are probably thinking to yourself, but that’s too easy! I know! But this gives you a steak that is juicy and flavorful. Try it, you’ll LOVE it!
