Living in New York State means we see the fall season much sooner than many. I’m not complaining though because I love the cooler temperatures, fall scents and all the scrumptious recipes that feature apples, pumpkin, caramel, pears and squashes. I’m not a baker but enjoy cooking however when I get something in my mind I have to at least try it. My baking recipes usually do not turn out so they get thrown in the garbage…not this time.

I had a box of organic carrot cake tantalizing me for weeks now and had to make something with it. I knew pumpkin and carrots were going to be the primary ingredients which is how I came up with this pumpkin carrot bread. Exceptionally moist on the inside with a unexpected flavor tasting so similar to gingerbread cookies! Enjoy

Moist Pumpkin Carrot Raisin Bread


1 pkg Carrot Cake-I used Simply Organic Carrot Cake
1 cup all-purpose flour
2 teaspoon cinnamon
1 1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon nutmeg
1 teaspoon pumpkin pie spice
1/4 teaspoon salt
1 cup pumpkin
2 eggs
1/4 cup granulated sugar
1/4 cup packed light brown sugar
1/4 cup canola oil
1 tablespoon milk
1/2 cup raisins
1 cup grated carrots


Heat oven to 350°F. In a large bowl combine carrot cake, flour, cinnamon, baking powder, baking soda, nutmeg, pumpkin pie spice, salt. Whisk until mixed well. In a small bowl add pumpkin, eggs, sugar, brown sugar, oil, and milk. Beat with hand mixer until thoroughly blended. Add wet ingredients to dry ingredients and mix by hand until combined (do not overmix). Mixture will look lumpy/grainy. Fold in raisins and carrots. Lightly spray a 9×5 loaf pan with cooking spray. Pour mixture in pan and bake 45-50 minutes or until toothpick comes out clean. Remove from oven and let cook 5 minutes. Remove from loaf pan and cool on wire rack.
