Crawfish Casserole

 

What you’ll need:

• 2 small (or 1 large) bag yellow saffron rice
• 2 bags (2 lb) crawfish tails
• 8oz velvetta cheese
• 1 can Rotel (diced tomatoes with green chilies)
• 1 can Cream of Chicken Soup
• 2 tbsp Crab Boil (liquid or powder)

Directions:

Cook rice as directed.  Mix remaining ingredients in separate bowl and microwave for 3-5 minutes until cheese is melted.  Mix cheese mixture with rice.  Pour into  9 x 13 casserole dish and cook at 350˚ for 15-20 minutes.
