Today’s recipe is one of my all-time favorites. Fairly easy to make, healthy and full of flavor, stuffed peppers make a great dish.
• 1 Cup of Spanish Rice
• 1 lb of ground turkey meat
• 4 bell peppers
• 1 15oz can of tomato sauce (with chunks)
• 1/3 chopped onion
• 1 garlic clove diced
• 1/2 cup of shredded cheddar cheese
• Salt & Pepper to taste
Brown the ground turkey in a skillet then drain. Add a cup of water, the rice, onion, garlic, salt & pepper and tomato sauce. Simmer for 10 minutes, making sure the rice is cooked through.
Preheat oven to 350˚
Cut the tops off the peppers off and clean out the seeds. Stuff the peppers with the mixture from the skillet and sprinkle the cheddar cheese on top.
Place peppers upright in a baking dish. Bake in the oven for 25-30 minutes.
* Also feel free to experiment with the mixture for the peppers as well. Add diced peppers, carrots, quinoa or coucous. Or mix up the spices to something more your flavor.
